Fluffy Vegan Pancakes for Two

Ingredients

  • 1 banana, mashed
  • 2 tablespoons ground flaxseed meal
  • 3/4 cup organic buckwheat flour
  • 2 scoops of vegan Planta strawberry jam protein powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 tablespoon apple cider vinegar
  • 1 1/3 cups almond milk

Toppings

  • strawberries
  • raspberries
  • raw creamy almond butter
  • vegan chocolate chips

Preparation

  1. Mash the banana.

  2. Combine all ingredients in a bowl to form a batter.

  3. Heat a skillet over low heat.

  4. Pour the batter onto the skillet in slightly larger blobs.

  5. Cook on low temperature for a longer time until golden and fluffy.

  6. Serve the pancakes with the toppings.
