Fried Eggs with Sautéed Kale and Cauliflower Gnocchi
Ingredients
- 2 eggs
- avocado oil
- everything but the bagel seasoning
- 1/2 package cauliflower gnocchi
- kale
Preparation
Microwave or boil cauliflower gnocchi for a few minutes to defrost.
Sauté the gnocchi in a nonstick pan with avocado oil over low-medium heat for 5-6 minutes, stirring to make it crispy.
Fry 2 eggs in avocado oil with everything but the bagel seasoning.
Sauté kale until tender, using oil as needed.
