Fried Eggs with Sautéed Kale and Cauliflower Gnocchi

Ingredients

  • 2 eggs
  • avocado oil
  • everything but the bagel seasoning
  • 1/2 package cauliflower gnocchi
  • kale

Preparation

  1. Microwave or boil cauliflower gnocchi for a few minutes to defrost.

  2. Sauté the gnocchi in a nonstick pan with avocado oil over low-medium heat for 5-6 minutes, stirring to make it crispy.

  3. Fry 2 eggs in avocado oil with everything but the bagel seasoning.

  4. Sauté kale until tender, using oil as needed.
