Vegan Banana Protein Pancakes

Ingredients

  • 1 banana (mashed)
  • 2T ground flaxseed
  • 1c @bobsredmill organic whole grain buckwheat flour
  • 2 scoop of #vegan pumpkin spice Planta protein powder from @highperformancenutrition
  • 1/2tsp cinnamon
  • 1/2tsp baking powder
  • 1T ACV (Apple cider vinegar)
  • 1tsp vanilla extract
  • ~1.5c of almond milk (or water)

Preparation

  1. Mash the banana in a bowl.

  2. Combine dry ingredients: ground flaxseed, buckwheat flour, protein powder, cinnamon, and baking powder in a separate bowl.

  3. Add wet ingredients: mashed banana, apple cider vinegar, vanilla extract, and gradually stir in almond milk to form a smooth batter.

  4. Heat a non-stick pan or griddle over medium heat.

  5. Pour batter onto the pan to form pancakes and cook until bubbles appear on the surface, then flip and cook until golden brown on both sides.

  6. Serve with optional toppings such as strawberries, coconut flakes, almond butter, or chocolate chips.
