Vegan Raspberry French Toast

Ingredients

Vegan french toast

  • 3 tbsp chickpea flour or rice flour
  • 1/2 cup non-dairy milk (125ml)
  • 1 tsp vanilla extract
  • 1 tsp cinnamon optional
  • 1 tbsp maple syrup or sugar*
  • 1 tbsp vegan butter or coconut oil
  • 4-5 slices soft bread gluten-free, if needed

To serve

  • non-dairy cream cheese or coconut yoghurt
  • fruits of choice
  • maple syrup or jam

Preparation

  1. Whisk the chickpea flour, non-dairy milk, vanilla, cinnamon, and maple syrup together in a deep plate.

  2. Heat the vegan butter or coconut oil in a skillet over medium heat.

  3. Dip a slice of the bread into the mixture and coat well on each side, then place in the skillet and fry for 2-3 minutes on each side until golden-brown. If using a large skillet, you can fry 2-4 slices at the same time.

  4. Serve with desired toppings.
