Malaysian Soy Sauce Fish Stir-Fry

Ingredients

  • Shallots
  • Garlic
  • Ginger
  • Lemongrass
  • Dried chili

Sauce

  • 2 tablespoons blended dried chili
  • 2 tablespoons oyster sauce
  • 2 tablespoons thick soy sauce
  • 4 tablespoons sweet soy sauce
  • Salt to taste
  • Sugar to taste

Add-ins

  • Fried fish (prepared)
  • Bird's eye chili or green onions (for garnish)

Preparation

  1. Sauté the shallots, garlic, ginger, lemongrass, and dried chili until crispy.

  2. Add 2 tablespoons of blended dried chili, 2 tablespoons of oyster sauce, 2 tablespoons of thick soy sauce, 4 tablespoons of sweet soy sauce, salt, and sugar to taste.

  3. Stir in the fried fish and garnish with bird's eye chili or green onions.
