Spicy Malaysian Shrimp Stir-Fry
Ingredients
- 1 kg large shrimp
- salt
- turmeric powder
Blended
- 2 large onions
- 5 cloves garlic
- 1-inch piece ginger
- 1/2-inch piece galangal
- 2 stalks lemongrass, finely chopped
- 2 red chilies
- 5 green bird's eye chilies
Sauce
- 2 tablespoons ground chili
- 1 tablespoon tom yum paste
- 1 tablespoon oyster sauce
- 1 tablespoon chili sauce
- 1 tablespoon fish sauce
- 1 piece tamarind slice
Optional
- long beans
Seasonings
- salt
- sugar
Garnish
- kaffir lime leaves
Preparation
Briefly fry the shrimp with salt and turmeric
Heat oil in a pan and sauté the blended ingredients until fragrant
Add ground chili and cook until the oil separates
Add oyster sauce, tamarind slice, chili sauce, and fish sauce, then cook until boiling
If the mixture is dry, add water
Add the fried shrimp, optional long beans, and kaffir lime leaves
Season to taste with salt and sugar
