Tuna Petai Basil Stir-Fry

Ingredients

  • 250g Smoked Mackerel Tuna
  • 2 boards Peeled Petai Beans
  • 1 bunch Basil
  • 1 handful Whole Bird's Eye Chilies

Ground spices

  • 2 large Red Chilies
  • 2 Red Curly Chilies
  • 5 Shallots
  • 3 Garlic Cloves
  • 1 piece Ginger
  • 1 piece Turmeric

Additional seasonings

  • 3 Kaffir Lime Leaves
  • 2 stalks Lemongrass
  • 1 tablespoon Lime Juice
  • Salt, sugar, and seasoning to taste
  • Water as needed

Preparation

  1. Fry the smoked mackerel tuna until half dry and set aside.

  2. Sauté the ground spices with kaffir lime leaves and lemongrass until fragrant, then add the mackerel tuna, stir and add water as needed.

  3. Add lime juice, salt, sugar, and seasoning to taste, also add whole bird's eye chilies and taste test.

  4. After the water reduces a bit, add petai beans, let them wilt slightly, finally add basil leaves and stir briefly.

  5. Remove from heat, serve and enjoy.
