No-Beef Cashew Stir Fry with Noodles

Ingredients

  • wholewheat noodles (Blue Dragon brand)
  • red onion
  • green beans
  • baby corn
  • garlic
  • courgette
  • red pepper
  • no-beef strips (Taste & Glory brand)
  • cashews
  • soy sauce
  • Chinese five spices

Toppings

  • chopped red spring onion
  • coriander
  • satay sauce (Blue Dragon brand)

Preparation

  1. Cook the wholewheat noodles according to the package directions.

  2. Heat oil in a large wok or skillet over medium-high heat.

  3. Add the no-beef strips and stir-fry until browned.

  4. Add garlic, red onion, green beans, baby corn, courgette, and red pepper, then stir-fry until vegetables are tender-crisp.

  5. Stir in soy sauce and Chinese five spices, mixing well.

  6. Add cashews and cook for another minute.

  7. Serve the stir-fry over the cooked noodles.

  8. Top with chopped red spring onion, coriander, and satay sauce.
