No-Beef Cashew Stir Fry with Noodles
Ingredients
- wholewheat noodles (Blue Dragon brand)
- red onion
- green beans
- baby corn
- garlic
- courgette
- red pepper
- no-beef strips (Taste & Glory brand)
- cashews
- soy sauce
- Chinese five spices
Toppings
- chopped red spring onion
- coriander
- satay sauce (Blue Dragon brand)
Preparation
Cook the wholewheat noodles according to the package directions.
Heat oil in a large wok or skillet over medium-high heat.
Add the no-beef strips and stir-fry until browned.
Add garlic, red onion, green beans, baby corn, courgette, and red pepper, then stir-fry until vegetables are tender-crisp.
Stir in soy sauce and Chinese five spices, mixing well.
Add cashews and cook for another minute.
Serve the stir-fry over the cooked noodles.
Top with chopped red spring onion, coriander, and satay sauce.

This recipe is ideal for using up leftover vegetables.
