Buckwheat Almond Flour Waffles with Smashed Greens

Ingredients

Waffle batter

  • 1/4 cup buckwheat flour
  • 1/4 cup almond flour
  • 1/2 teaspoon baking powder
  • 1 egg or flax egg
  • 1/4 to 1/2 cup almond milk
  • Salt and pepper to taste

Smashed greens

  • 1/2 ripe avocado
  • 1/2 cup edamame
  • Handful of freshly steamed kale

Preparation

  1. Preheat the waffle iron if necessary

  2. Combine all the dry ingredients and then whisk in the plant-based milk until a thick, sticky consistency is achieved.

  3. Pour the batter into a hot, lightly greased waffle iron and allow to cook for at least five minutes.

  4. Steam the kale until tender

  5. Make the smashed greens by blitzing 1/2 ripe avocado, 1/2 cup of edamame and a handful of freshly steamed kale until combined.

  6. Drizzle the waffle with olive oil once it is on the plate.

  7. Spoon over the smashed greens and add natural yogurt.

  8. Optionally, finish with an egg or seeds for added protein.
