Crispy Fried Shrimp Rice Paper Rolls

Ingredients

  • 8 sheets of rice paper
  • 500g shrimp or prawns
  • 1 scallion
  • 2 tablespoons sesame oil
  • 2 tablespoons Thai fish sauce or soy sauce
  • 2 tablespoons cornstarch
  • Seed oil
  • Salt
  • Pepper

Preparation

  1. Clean the shrimp and cut them into small dice. Chop the scallion, place both in a bowl, and add all other ingredients except the seed oil. Mix well.

  2. Place a rice paper sheet and cover with the filling mixture. Add another rice paper sheet on top and press firmly.

  3. Heat the seed oil in a pan and fry the assembled rolls until crispy on all sides.
