Crispy Fried Shrimp Rice Paper Rolls
Ingredients
- 8 sheets of rice paper
- 500g shrimp or prawns
- 1 scallion
- 2 tablespoons sesame oil
- 2 tablespoons Thai fish sauce or soy sauce
- 2 tablespoons cornstarch
- Seed oil
- Salt
- Pepper
Preparation
Clean the shrimp and cut them into small dice. Chop the scallion, place both in a bowl, and add all other ingredients except the seed oil. Mix well.
Place a rice paper sheet and cover with the filling mixture. Add another rice paper sheet on top and press firmly.
Heat the seed oil in a pan and fry the assembled rolls until crispy on all sides.
