Potato Buns Recipe

Ingredients

  • 2 small/medium russet potatoes
  • 1 tbs avocado oil
  • 1 3/4 cup flour
  • 1 tsp sugar
  • 1 tsp active dry yeast
  • 3 tbs warm water (not hot!)
  • generous pinch of salt
  • 1 egg
  • 1/2 tsp turmeric (optional for color)

Preparation

  1. Wash, peel, and cut your potatoes into one inch cubes

  2. Boil them in a pot for ~10 or until soft and tender

  3. Add yeast, sugar, and warm water into a bowl

  4. Mix and set aside to allow the yeast to get active and bubbly

  5. When your potatoes are done, drain completely and mash until no clumps remain

  6. Add 1 tbs oil to your potatoes. in a large bowl, add flour, salt, and yeast mixture along with the mashed potatoes. u

  7. Use your hands to combine everything together

  8. Then add in your egg and use your hands to knead until you form a dough ball.. add turmeric here if you're using. g

  9. Grease a medium bowl and place your dough bowl in and allow it to rest in a warm area for 30-60 mins or doubled in size. then remove dough and place it on a lightly floured surface and cut into 4 dough balls

  10. Roll each one into a tight ball shape- make sure you keep the other dough covered to prevent them from drying out while doing this step

  11. Prepare all 4 dough balls and then punch each one down to release all the air pockets to form round discs

  12. Cover and let rise again for 30-45 minutes (last rise, I promise!). preheat your oven to 400ºF

  13. Make egg wash and lightly brush your buns and top with sesame seeds- optional step

  14. Ou can also bake sans egg wash and it will be fine. bake for 15-18 minutes and cool for 5 minutes before slicing

  15. Dd your burger fillings and enjoy
