Spicy Pickled Rambutan Salad
Ingredients
- 25 rambutans
- 2 limes for juicing
- 2 thinly sliced limes for topping
- 2 chopped bird's eye chilies
- 1/2 teaspoon salt
- 2 tablespoons sugar
- 200 ml hot water
Spice paste
- 2 curly red chilies
- 2 bird's eye chilies (add more if desired for extra heat)
Preparation
Boil the curly red chilies and bird's eye chilies, then grind them into a paste and set aside.
Dissolve sugar in hot water, add lime juice, salt, and the spice paste, then stir well.
Place the rambutans in a container, pour the sugar mixture over them, sprinkle with chopped bird's eye chilies, and top with sliced limes.
Refrigerate and serve cold.
