Spicy Pickled Mango and Rambutan

Ingredients

  • 1 bunch peeled rambutan
  • 2 shredded mangoes
  • 600 ml water
  • 200 g granulated sugar
  • 1 tsp salt

Ground spices

  • 5 curly red chilies
  • 5 red bird's eye chilies
  • 1/2 tsp grilled shrimp paste
  • 1 thumb-sized piece tamarind

Preparation

  1. Wash all the fruits thoroughly and drain them.

  2. Mix the ground spices, sugar, salt, and water together and bring to a boil. Once boiling, turn off the heat.

  3. Let the mixture cool to room temperature, then pour it over the fruits. Refrigerate and serve chilled.
