Crispy Spiced Fried Cassava

Ingredients

  • 500g cassava
  • Water as needed
  • Ice water as needed

Ground spices

  • 3 cloves garlic
  • 3 tsp salt
  • 2 tsp powdered stock
  • 1 tsp coriander seeds
  • 1 tsp turmeric powder

Preparation

  1. Boil the cassava with regular water for 15 minutes, then remove and drain.

  2. Mix the ground spices with ice water and soak the boiled cassava in this spiced ice water, ensuring the water level is even with the cassava.

  3. Store in the refrigerator for at least 1 hour; overnight is recommended for better flavor.

  4. Fry in plenty of oil until golden brown.

  5. Serve with grated cheddar cheese or your favorite dipping sauce.
