Crispy Fried Bala-Bala Fritters
Ingredients
- 250g all-purpose flour
- 2 tablespoons rice flour
- 1 tablespoon cornstarch
- 1 medium carrot, cut into matchsticks
- 1/4 cabbage, finely sliced
- 1 stalk green onion, finely sliced
- 1 stalk celery, finely sliced (optional)
- 1/2 teaspoon ground pepper
- Salt, to taste
- Powdered stock, to taste
- Water, as needed, to achieve a batter that is not too thick or thin
Ground spices
- 3 cloves garlic
- 1 tablespoon dried shrimp
Preparation
Mix all ingredients together, adding water little by little while stirring until smooth and lump-free, then let the batter rest for a short while.
Heat a generous amount of oil in a pan. Once hot, take some batter, pour it into a ladle, dip the ladle into the hot oil and allow the batter to release by itself. Fry until golden brown, then drain.
Serving suggestions
Serve the bala-bala with bird's eye chili or chili sauce.
