Crispy Fried Chicken Intestines with Tomato Sambal
Ingredients
- 500 grams chicken intestines
- 2 bay leaves
- 2 kaffir lime leaves
- 2 cm galangal, smashed
- Water as needed
- Salt as needed
- Sugar as needed
Spice paste
- 4 cloves garlic
- 1 teaspoon coriander
- 1 cm turmeric
Coating
- Seasoned flour as needed
- Egg
Sambal
- 10 bird's eye chilies
- 3 curly chilies
- 2 cloves garlic
- 4 shallots
- 1 large tomato
- 1/2 teaspoon shrimp paste
- Sugar as needed
- Salt as needed
Preparation
Put chicken intestines in a pot, add ground spice paste and all ingredients except egg.
Boil for 15 minutes, remove, and drain.
Mix chicken intestines with egg and stir well.
Coat intestines with seasoned flour, pressing lightly so flour sticks.
Heat oil, fry chicken intestines until golden and crispy, remove, and drain.
Sambal
Fry all sambal ingredients except sugar and salt.
Blend all sambal ingredients and taste to adjust seasoning.
