Toasted Sourdough with Hummus Toppings
Ingredients
- Sourdough bread
- Homemade hummus
- Mini spinach and cheese omelette or cheesy tofu and spinach scramble
- Crispy roasted spiced chickpeas
- Cherry tomatoes
- Arugula
- Balsamic glaze
- Everything but the bagel seasoning
Hummus
- Overcooked chickpeas (prepared from dry)
- Runny tahini
- 2 tablespoons aquafaba or cold water
- Juice of 1 large lemon
- Roasted garlic cloves in olive oil
- Generous pinch of sea salt
- Olive oil
Preparation
Toast the sourdough bread until golden.
Prepare the spinach and cheese omelette or cheesy tofu and spinach scramble using preferred ingredients.
Roast the spiced chickpeas until crispy.
Make the hummus by overcooking chickpeas from dry to make them extra soft.
In a blender or food processor, combine runny tahini, 2 tablespoons aquafaba or cold water, juice of 1 large lemon, roasted garlic cloves in olive oil, and a generous pinch of sea salt, then mix until smooth.
Add the overcooked chickpeas to the mixture and blend again until creamy.
Assemble the toast by spreading hummus on the toasted bread, adding the omelette or scramble, roasted chickpeas, cherry tomatoes, and arugula.
Drizzle with balsamic glaze and sprinkle with everything but the bagel seasoning before serving.
