Savory Plant-Based Breakfast Toast
Ingredients
- Sourdough bread
- Mini spinach and cheese omelette or cheesy tofu and spinach scramble (using justegg and parmelacreamery)
- Crispy roasted spiced chickpeas
- Cherry tomatoes
- Arugula
- Balsamic glaze
- Everything but the bagel seasoning
Hummus
- Chickpeas (prepared from dry and overcooked)
- Good amount of runny tahini (recommended: good quality like soomfoods)
- 2 tablespoons aquafaba or cold water
- Juice of 1 large lemon
- 2 roasted garlic cloves in olive oil
- Generous pinch of sea salt
Preparation
Toast the sourdough bread.
Prepare the homemade hummus using the hummus ingredients and preparation method.
Cook the spinach and cheese omelette or tofu scramble with justegg and parmelacreamery.
Roast the spiced chickpeas until crispy.
Assemble by spreading hummus on the toasted bread, add the omelette or scramble, chickpeas, cherry tomatoes, and arugula.
Drizzle with balsamic glaze and sprinkle with everything but the bagel seasoning.
Hummus
Add a good amount of runny tahini, 2 tablespoons of aquafaba or cold water, juice of 1 large lemon, 2 roasted garlic cloves in olive oil, and a generous pinch of sea salt to a blender or food processor, and mix until smooth.
Then add the overcooked chickpeas and mix again until creamy.
For best results, use a blender as it gives creamier results than a food processor.
Tips
Use chickpeas prepared from dry and overcook them for extra softness to achieve a creamier hummus texture.
