Turkish Bakery-Style Cheese Pastries
Ingredients
Dough
- 2 cups warm milk
- 1 packet dry yeast
- 1 teaspoon salt
- 1 tablespoon granulated sugar
- 2 tablespoons melted butter or margarine
- 1/2 cup vegetable oil
- 3/4 cup cornstarch
- 4 to 4.5 cups flour
Filling
- White cheese or kasar cheese, as needed
Additional
- 1 egg
Preparation
In a deep bowl, combine warm milk, yeast, sugar, and salt and mix well.
Add melted butter and vegetable oil and stir again.
Incorporate the cornstarch.
Gradually add flour while kneading to form a soft, non-sticky dough.
Cover the dough with plastic wrap and let it rise in a warm place for 30 minutes until it doubles or triples in size.
After rising, knead the dough again for 3 to 5 minutes.
Divide the dough into 12 to 13 equal pieces, flatten each piece, add the cheese filling, and seal tightly to prevent cheese from leaking.
Place the sealed dough balls on a parchment-lined baking sheet.
Cover and let them rise for at least 20 minutes until puffy.
Gently brush the tops with beaten egg yolk without pressing down.
Bake in a preheated oven at 210°C until golden brown.
