Vegan Tempeh BLT Sandwich with Avocado

Ingredients

  • sesame ezekiel bread
  • creamy avocado
  • dijon mustard
  • fresh spinach
  • sliced cucumber
  • sliced mini heirloom tomatoes
  • 1/2 block tempeh

Tempeh marinade

  • 1-2 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • garlic powder
  • smoked paprika
  • black pepper
  • liquid smoke (optional)
  • splash of water

Preparation

  1. Slice 1/2 block tempeh into 1/4 inch slices and set on a pan over medium heat.

  2. Cook tempeh for 2-3 minutes per side until golden and almost crispy.

  3. While cooking, mix the marinade: 1-2 tablespoons soy sauce, 1 tablespoon maple syrup, garlic powder, smoked paprika, black pepper, optional liquid smoke, and a splash of water to thin.

  4. Pour the marinade over the tempeh and cook for 1 more minute until crispy.

  5. Smear sesame ezekiel bread with creamy avocado and a touch of dijon mustard.

  6. Layer with fresh spinach, sliced cucumber, sliced mini heirloom tomatoes, and the crispy tempeh to assemble the sandwich.

  7. For a more filling meal, serve with a carb-dense salad or potatoes on the side as suggested.
