Ginger Coconut Oats

Ingredients

  • 1/2 cup rolled oats
  • 1 tbsp ground flaxseed
  • 1 tsp fresh ginger, minced or 1/2 tsp ginger powder
  • 1 tbsp coconut flakes
  • 1/4 tsp vanilla extract
  • 1 cup almond milk
  • 1 banana, sliced

Preparation

  1. Combine all ingredients in a saucepan and stir to combine

  2. Bring to a simmer over low to medium heat for 3-5 minutes, stirring to prevent sticking

  3. Remove from heat and serve in a bowl topped with fruit
