Purple Quinoa Breakfast Bowl with Toppings
Ingredients
- 1.5 cups blueberries
- 0.5 cup orange juice
- quinoa
- cinnamon
- mixed nut butter
- strawberries
- hemp seeds
Preparation
Heat 1.5 cups blueberries and 0.5 cup orange juice over the stove until blueberries burst and mixture thickens.
Transfer the sauce to a blender and purée slightly.
Store the blueberry sauce in an airtight container in the fridge if not using immediately.
Mix the blueberry sauce with cooked quinoa and cinnamon.
Top the mixture with mixed nut butter, strawberries, and hemp seeds to serve.
