Quinoa Fruit and Nut Breakfast Bowl

Ingredients

  • 1 c quinoa
  • 1/4 c toasted almonds
  • 3 tbsp coconut cream
  • 1 lemon zested
  • 4 strawberries sliced
  • 2 tbsp syrup
  • 14 blueberries
  • 2 tbsp toasted coconut
  • 1 tsp cardamom
  • 1 tsp cinnamon

Preparation

  1. Rinse the quinoa and cook it in water according to package instructions until tender.

  2. In a large bowl, combine the cooked quinoa with toasted almonds, coconut cream, lemon zest, sliced strawberries, blueberries, syrup, cardamom, and cinnamon.

  3. Mix well and serve immediately.
