Quinoa Breakfast Bowl with Fruits and Nuts
Ingredients
- 1 c quinoa
- 1/4 c toasted almonds
- 3 tbsp coconut cream
- 1 lemon zested
- 4 strawberries sliced
- 2 tbsp syrup
- 14 blueberries (but honestly this recipe deserves 30 blueberries)
- 2 tbsp toasted coconut
- 1 tsp cardamom
- 1 tsp cinnamon
Preparation
Cook 1 cup of quinoa in water according to package instructions, adding cinnamon and cardamom for flavor
Zest the lemon and slice the strawberries
In a bowl, combine the cooked quinoa with toasted almonds, coconut cream, lemon zest, sliced strawberries, blueberries, syrup, and toasted coconut. Mix well
