Quinoa Breakfast Bowl with Fruits and Nuts

Ingredients

  • 1 c quinoa
  • 1/4 c toasted almonds
  • 3 tbsp coconut cream
  • 1 lemon zested
  • 4 strawberries sliced
  • 2 tbsp syrup
  • 14 blueberries (but honestly this recipe deserves 30 blueberries)
  • 2 tbsp toasted coconut
  • 1 tsp cardamom
  • 1 tsp cinnamon

Preparation

  1. Cook 1 cup of quinoa in water according to package instructions, adding cinnamon and cardamom for flavor

  2. Zest the lemon and slice the strawberries

  3. In a bowl, combine the cooked quinoa with toasted almonds, coconut cream, lemon zest, sliced strawberries, blueberries, syrup, and toasted coconut. Mix well
