Quinoa Oatmeal Bowl with Fresh Currants

Ingredients

  • 1/4 cup rolled oats
  • 1/4 cup quinoa flakes
  • 1/4 cup previously prepared toasted quinoa
  • 1 tsp maple syrup
  • 1 1/2 tsp cinnamon

Toppings

  • vine of currants
  • blood orange wheels
  • blueberries
  • pumpkin seeds
  • cacao nibs
  • puffed millet
  • spring of mint

Preparation

  1. Combine the oats, quinoa flakes, toasted quinoa, maple syrup, and cinnamon in a pot with water or plant-based milk.

  2. Simmer the mixture until cooked and desired consistency is reached.

  3. Serve in a bowl and top with the prepared toppings.
