Quinoa Oatmeal Bowl with Fresh Currants
Ingredients
- 1/4 cup rolled oats
- 1/4 cup quinoa flakes
- 1/4 cup previously prepared toasted quinoa
- 1 tsp maple syrup
- 1 1/2 tsp cinnamon
Toppings
- vine of currants
- blood orange wheels
- blueberries
- pumpkin seeds
- cacao nibs
- puffed millet
- spring of mint
Preparation
Combine the oats, quinoa flakes, toasted quinoa, maple syrup, and cinnamon in a pot with water or plant-based milk.
Simmer the mixture until cooked and desired consistency is reached.
Serve in a bowl and top with the prepared toppings.
