Saffron Raisin and Gingerbread Oats

Ingredients

  • 1 cup rolled oats (gluten free if needed)
  • 1.5 cups water
  • handful of raisins
  • pinch of good quality saffron
  • pinch of salt
  • 1 tbsp agave or maple syrup
  • 2 tbsp almond flakes
  • 2 tbsp crumbled crispy gingerbread
  • splash of coconut milk (or other vegan milk of choice)

Preparation

  1. Put oats, water, saffron, raisins and salt in a pot, bring to a boil and simmer for 3-4 minutes or until it’s reached your desired consistency, stir every now and then.

  2. Take off the heat and stir in the syrup.

  3. Pour into a bowl and serve with almonds, gingerbread and your choice of milk.
