Fluffy Turkish Pogaça with Cheese and Olives
Ingredients
- 1 tea glass warm milk
- 1 tea glass warm water
- 1 tea glass vegetable oil
- 1 tablespoon butter at room temperature
- 2 egg whites (yolks reserved for topping)
- 1 packet instant yeast
- 3 teaspoons granulated sugar
- 1 teaspoon salt
- Approximately 8 to 8.5 tea glasses flour (add gradually)
Filling
- Olives
- Grated kasar cheese
Preparation
In a mixing bowl, combine water, milk, yeast, and sugar, stir and let sit for five minutes to activate the yeast
Add the remaining ingredients except flour, then gradually add flour to form a soft dough
Cover the dough and let it rise until doubled in size
Divide the dough into mandarin-sized pieces and flatten each in your palm
Optionally add cheese or pitted olives to some pieces, seal the edges and place seam side down on a baking sheet lined with parchment paper
Cover with a kitchen cloth and let rest for 15 to 20 minutes for a second rise
Brush with egg yolk and bake in a preheated oven at 190 degrees Celsius until golden
It can also be made without any filling if desired
