Homemade Soft Pretzels

Ingredients

  • 4 1/2 cups all-purpose flour
  • 1 Tbsp instant yeast
  • 1 Tbsp brown sugar
  • 1 tsp salt
  • 3 Tbsp vegetable oil
  • 2 cups non-dairy milk
  • Water (as needed for boiling)
  • 2 Tbsp molasses
  • 1 Tbsp baking soda
  • Coarse salt, to taste (optional)

Preparation

  1. Mix the dry ingredients and add the wet ingredients.

  2. Knead the mixture by hand or using a stand mixer until a dough forms, about 10 minutes by hand.

  3. Transfer the dough to a lightly oiled container and let it rise until doubled in size, about one hour.

  4. On an unfloured surface, divide the dough into 12-16 equal parts and roll each into a ball, then cover and let rise for 30 minutes.

  5. Roll each ball into a 12-inch rope and shape into pretzels.

  6. Place the shaped pretzels on a parchment-lined baking sheet, cover, and let them rest in the refrigerator for 30 minutes.

  7. Boil water and add 2 tablespoons of molasses and 1 tablespoon of baking soda.

  8. Boil each pretzel for 1 minute on each side.

  9. Transfer the boiled pretzels to a parchment-lined baking sheet and sprinkle with coarse salt if desired.

  10. Bake at 450°F for 12-15 minutes.

  1. Do not skip adding baking soda to the boiling water for authentic flavor and texture.
