Turkish Shaped Yeast Pastry

Ingredients

  • 1 packet instant yeast (or 1 packet fresh yeast)
  • 2 cups warm milk
  • 2 tablespoons sugar
  • 1 cup vegetable oil
  • 1 cup water
  • 2 teaspoons salt
  • 2 eggs (whites for dough, yolks for brushing)
  • As much flour as needed (approximately 7-8 cups)

Optional toppings

  • Sesame seeds and nigella seeds

Preparation

  1. Heat vegetable oil, milk, water, sugar, and salt in a pot until warm to the touch.

  2. Place egg whites in a mixing bowl.

  3. Pour the warmed mixture over the egg whites.

  4. Add part of the flour and sprinkle instant yeast on top, then mix. If using fresh yeast, add it to the liquid ingredients and dissolve.

  5. Gradually add the remaining flour and knead for 10 minutes to form a soft, smooth dough.

  6. Cover the dough and let it rise for 45-50 minutes.

  7. After rising, divide the dough into mandarin-sized pieces, roll into balls, and flatten into ovals.

  8. Cut the ovals lengthwise into thin strips with a knife or pizza cutter, leaving the ends intact.

  9. Gather the strips together and shape into rounds, then place on baking sheets.

  10. Cover and let rise for about one hour.

  11. Brush with egg yolks, sprinkle with sesame and nigella seeds if desired, and bake in a preheated 200°C fan oven until golden brown.
