No Tuna Chickpea Salad Sandwich
Ingredients
- 2 15-ounce cans chickpeas
- 1/2 cup chopped celery
- 1 small chopped onion
- 3-4 tablespoons sweet relish
- 1 diced dill pickle
- 1/2 teaspoon garlic powder
- 1/4 teaspoon kelp
- 1/2 teaspoon thyme or to taste
- 2 tablespoons lemon juice
- 3 tablespoons tahini
- 3 tablespoons just mayo
- 2 teaspoons Dijon mustard
- 1 tablespoon maple syrup
- Salt and pepper to taste
Assembly
- Dave’s killer bread
- Mixed lettuce
- Nutritional yeast
- Pickle
Preparation
Drain and rinse the chickpeas, then mash them in a bowl.
In a large bowl, combine all the salad ingredients and mix until well incorporated.
Spread the chickpea mixture onto slices of Dave’s killer bread.
Add mixed lettuce and sprinkle with nutritional yeast.
Serve with a pickle on the side.
