Pumpkin Pecan Pie Bread
Ingredients
Wet
- 1 cup pumpkin purée
- 1/4 cup applesauce
- 1/8 cup maple syrup
- 1/2 tbsp apple cider vinegar
- 1/4 cup non dairy milk
- 2 tbsp almond (or any nut) butter
Dry
- 2 servings plant protein
- 1/2 cup coconut flour
- 1/3 cup pumpkin seed powder (or almond flour)
- 1/4 cup dark chocolate chips
- 2 tbsp psyllium husk (optional)
- 1/2 tsp baking soda
- 1 tsp sea salt
Preparation
Mix all wet ingredients in a large bowl.
Add dry ingredients and mix well.
The batter will be creamy, like pie filling.
Spoon and spread into an oiled bread pan.
Bake at 350 degrees for 17 minutes.
Remove from oven and add optional pecans on top.
Bake for an additional 8-10 minutes.
