Turkish Minced Meat Pide

Ingredients

Dough

  • 4.5 cups warm water
  • 1 cup warm milk
  • 1 packet fresh yeast
  • 1.5 teaspoons sugar
  • 2 heaping teaspoons salt
  • nearly 2 kg flour
  • 3 tablespoons oil for kneading

Filling

  • 1 kg fatty beef mince
  • 5 tablespoons vegetable oil
  • 2 large onions
  • 6 green peppers
  • 4 large bell peppers
  • 4 medium tomatoes
  • 2-3 teaspoons salt
  • 1 teaspoon black pepper
  • 2 heaping teaspoons red pepper flakes
  • chili flakes to taste

Preparation

  1. In a mixing bowl, combine warm water, milk, sugar, and yeast and stir until dissolved.

  2. Add flour to form a soft dough that is slightly sticky and knead thoroughly.

  3. Add oil to the dough and knead for another 3 to 5 minutes, then let it rise for 1 hour and 15 minutes.

  4. Prepare the filling by chopping onions and peppers in a food processor.

  5. Mix the chopped vegetables with ground beef and all the spices.

  6. Add chopped tomatoes to the filling mixture and stir well, then adjust seasoning for salt and spiciness.

  7. Divide the dough into 22 mandarin-sized balls and place them on a floured surface, covering with a thick cloth.

  8. Roll out each dough piece thinly into an oblong shape and spread the filling evenly over it.

  9. Carefully transfer the prepared dough to a parchment-lined baking sheet.

  10. Bake in a preheated oven at 265°C on the second rack from the bottom for 10 minutes.

  11. Remove from oven, fold the meat sides together, stack them, cover, and keep warm until all are baked.

Tips

  1. When cooled, slice and reheat in a hot oven or microwave.
