Crispy Outside Soft Inside Börek
Ingredients
- 1 cup warm milk (200ml)
- 1 cup warm water (200ml)
- 1 tea glass vegetable oil (100ml)
- 2 eggs (yolks reserved for topping)
- 1 tablespoon yeast
- 1 tablespoon sugar
- 1 teaspoon salt
- 6-6.5 cups flour (add gradually)
For rolling out
- 3 heaping tablespoons starch (wheat or corn, doesn't matter)
- 1 cup flour
For greasing dough
- 100g butter
Filling
- 200g white cheese
For topping
- 2 egg yolks
- 1 teaspoon milk
Preparation
Mix water, milk, yeast, and sugar in a suitable bowl.
Add the remaining ingredients to form a soft dough that does not stick to hands.
Cover the dough and let it rest for 30 minutes.
Divide the risen dough into 9 equal pieces.
Roll out each piece with the flour and starch mixture to 30-40 cm in size.
Shape the dough as demonstrated in the video.
Add your desired filling, such as minced meat which is recommended.
After assembling all pieces, let them rest for 20 minutes for tray proofing.
Brush with the egg yolk and milk mixture.
Bake in a preheated oven at 190 degrees Celsius until done.
Tips
You can use any filling you prefer; the minced meat version is particularly delicious.
