Crumpet Breakfast Bake with Bananas and Chocolate
Ingredients
- 2 eggs
- 1/2 cup almond milk
- 1 1/2 tsp ground cinnamon
- 1 tsp vanilla
- 1/4 cup maple syrup
- 2 bananas
- 6 crumpets
- 1 tsp linseeds
- 2 tbsp unsweetened peanut butter
- small chocolate pieces (about 2 tbsp roughly chopped chocolate)
Preparation
In a bowl mix the almond milk, eggs, cinnamon and maple syrup. Whisk till well combined
Add the crumpets and bananas and coat all the pieces in the almond milk mix
Arrange in an oven proof dish and pour over any remaining milk mix
Sprinkle with the linseeds and if using add the chocolate in between the crumpets and banana
Bake for 30-25 minutes till golden brown and crispy on top
Drizzle with peanut butter and serve
Notes
This bake is adapted for a family of 4 and can be varied with different ingredients
It uses breakfast staples to create a treat similar to bread and butter pudding
