Homemade Tomato Conserves and Paste
Ingredients
- Approximately 22 kg tomatoes
- Salt (for paste), to taste
Preparation
Soak the tomatoes in carbonated water in two batches to clean them.
Peel and chop the tomatoes over several hours.
Boil the chopped tomatoes as it is said to make them sweeter and more flavorful.
While hot, pack the boiled tomatoes into jars, seal the lids, and invert them to create a vacuum.
For the tomato skins, boil them briefly, add salt, and spread them out on a tray to dry in the sun until they form a paste.
