Pesto Dirty Dogs with Chickpea Salad
Ingredients
- Aldi meat-free hot dogs
- seeded sourdough baguette
- basil pesto
- red Leicester Sheese
- onion
- English mustard
- rocket leaves
- avocado
- tomato
- cucumber
- stuffed olives
- chickpeas
- caesar dressing
- black pepper
Preparation
Boil the meat-free hot dogs according to package instructions.
Fry the onion until golden brown.
Optionally, fry the boiled hot dogs briefly to improve texture.
Spread basil pesto on the seeded sourdough baguette.
Add red Leicester Sheese, fried onion, and English mustard to the baguette.
Place the hot dog into the baguette and assemble.
Combine rocket leaves, avocado, tomato, cucumber, stuffed olives, and chickpeas in a bowl.
Dress the salad with caesar dressing and sprinkle with black pepper.
Tips
Boiling the hot dogs may result in a soft texture; frying them briefly afterward can make them firmer.
