Chili Garlic Chickpea Burgers

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1 tbsp chili garlic sauce
  • 2 tbsp lite soy sauce
  • 2 tbsp peanut butter
  • 1/4 medium red onion, minced
  • 1 small sweet potato, peeled and cubed
  • 1 tsp cumin
  • 1 cup rolled oats
  • 1 tsp garlic powder

Preparation

  1. Preheat oven to 375F

  2. Bring a small pot of water to a boil and add cubed sweet potato and cook until fork tender (about 6-8 minutes)

  3. While potato is cooking, mix water and flax seed to make flax egg

  4. Add all ingredients including sweet potato to a food processor and pulse until well mixed and easy to mold into patties

  5. Take 1/4 cup of mixture and with slightly wet hands, mold mixture into a patty shape

  6. Place patty on a lined baking sheet and repeat with remaining mixture (should form about 6-8 patties depending if you want to make them bigger in size)

  7. Bake 25 minutes, carefully flip and bake another 10-15 minutes or until burger is firm

  8. Serve between burger buns or my fav way to enjoy these patties is with rice
