Apple Coconut Cake with Lime and Lemon Zest
Ingredients
- 5 eggs
- 1 cup lemon-scented or natural yogurt
- 1 cup oil
- 300g sugar
- 160g all-purpose flour
- 1 teaspoon baking powder
- 2 apples, diced
- 50g shredded coconut
- Zest of 1 lime
- Zest of 1 small lemon
Preparation
Preheat the oven to 180Β°C. Grease a medium baking pan with margarine and dust with flour. Set aside.
Zest the lime and lemon.
In a bowl, combine all ingredients except flour and baking powder.
Add the flour and baking powder and mix briefly to combine.
Pour the batter into the prepared pan and bake for about 30 minutes, until a toothpick inserted comes out clean. Remove from oven and let cool completely.
Cut into squares and serve.
Bimby method
Place sugar and zest of lime and lemon (without the white part) in the bowl and pulverize for a few seconds at speed 9.
Add the remaining ingredients except flour and baking powder and mix for 5 minutes at speed 4.
Add flour and baking powder and mix for 30 seconds at speed 5.
