Carrot Cake with Molten Chocolate Center
Ingredients
- 2 large carrots, chopped
- 3 eggs
- 1/2 cup oil
- 1.5 cups sugar
- 2.5 cups all-purpose flour
- 1 tablespoon baking powder
Topping
- 1 (14-ounce) can sweetened condensed milk
- 2 tablespoons unsalted butter
- 5 tablespoons cocoa powder
- 1/2 cup milk
Preparation
Preheat oven to 180Β°C (350Β°F) and grease a 9-inch round cake pan
Blend the chopped carrots, eggs, and oil in a blender until smooth
In a bowl, combine the sugar and flour
Add the blended mixture and mix well
Add the baking powder and mix
Pour the batter into the prepared pan
Bake for 30 minutes
Topping
In a saucepan, combine the condensed milk, butter, cocoa powder, and milk
Cook over low heat, stirring constantly, until thickened
Pour the warm topping over the center of the baked cake
