Mini Two-Layer Cinnamon Cake with Vegan Frosting
Ingredients
- 1 flax egg
- 1 tbsp almond butter
- 2 tbsp milk
- 1 tsp cinnamon
- 1/4 tsp baking soda
- 1/4 cup rolled oats
- 2 tbsp liquid coconut oil
- 1/3 cup coconut sugar
- 1/3 cup white all-purpose flour
- maple syrup
- vegan cream cheese
- vegan vanilla yogurt
Preparation
Mix all ingredients together.
Bake at 350 degrees Fahrenheit for 15-20 minutes.
To make a two-layer cake, double the recipe and use a mini cake pan (6x2 inches).
For the frosting, mix maple syrup, vegan cream cheese, and vegan vanilla yogurt to taste.
