Mini Two-Layer Cinnamon Cake with Vegan Frosting

Ingredients

  • 1 flax egg
  • 1 tbsp almond butter
  • 2 tbsp milk
  • 1 tsp cinnamon
  • 1/4 tsp baking soda
  • 1/4 cup rolled oats
  • 2 tbsp liquid coconut oil
  • 1/3 cup coconut sugar
  • 1/3 cup white all-purpose flour
  • maple syrup
  • vegan cream cheese
  • vegan vanilla yogurt

Preparation

  1. Mix all ingredients together.

  2. Bake at 350 degrees Fahrenheit for 15-20 minutes.

  3. To make a two-layer cake, double the recipe and use a mini cake pan (6x2 inches).

  4. For the frosting, mix maple syrup, vegan cream cheese, and vegan vanilla yogurt to taste.
