Berry Champagne Gummy Hearts

Ingredients

  • 170-180g fresh raspberries or strawberries (about 1 cup blended)
  • 14g gelatin powder (we use @greatlakeswellness gelatin)
  • 1 tablespoon lemon juice
  • 2 tablespoons champagne (or non-alcoholic alternative)
  • 3 tablespoons honey or agave

Preparation

  1. Lightly grease your gummy molds and set aside.

  2. Add fruit to blender and blend until smooth.

  3. Sprinkle gelatin over lemon juice and champagne in a bowl, then stir well and let sit for 5 minutes.

  4. Add fruit purée to a small saucepan over low heat and stir. Heat the purée enough to melt the gelatin (about 120°F), but don’t boil.

  5. Stir in the honey and the gelatin mixture until the gelatin is fully melted.

  6. Pipe the mixture into the molds, then refrigerate until set (about 90 minutes).

  7. Remove from the molds and place on a wire rack, and let sit for 8 hours or overnight at room temperature, preferably in front of a fan.

Tips

  1. These gummies use real fruit and have less sugar than store-bought versions.

  2. Substitute champagne with non-alcoholic alternatives or lemon juice for an alcohol-free option.

  3. Leave the gummies out overnight to dry for a chewy texture; skipping this makes them more like jello.
