No Bake Vegan Gingerbread Balls

Ingredients

  • 1 1/4 cup walnut pieces
  • 1 cup soft pitted dates
  • 1 cup gluten free oats
  • 2 tbsp cinnamon
  • 3 tsp ginger
  • 1 tbsp pure maple syrup
  • 2 tbsp blackstrap molasses
  • outer layer:
  • dark chocolate bar
  • 1 tbsp coconut oil
  • sea salt
  • • crushed graham crackers

Preparation

  1. Add the walnuts and oats to the food processor - mix until broken down

  2. Add the dates and continue to mix until it forms into dough

  3. Add the rest of ingredients - mix

  4. Remove from food processor and form small balls - place on cookie sheet lined with parchment paper

  5. Once all balls are complete melt your chocolate and coconut oil together - use two forks to dip each ball (be sure to let any excess chocolate drip off before placing back on sheet)

  6. Then top with sea salt and crushed graham crackers! Place in freezer for 30 minutes before serving
