The Best Vegan Snickers

Ingredients

  • • 200g medjool dates
  • • 2 heaped tbsp peanut butter
  • • 1 tsp vanilla paste
  • • 1/4 tsp salt
  • • 2/3 cup oats
  • • salted roasted peanuts, chopped
  • • 120g vegan chocolate (i used bourneville buttons)

Preparation

  1. Soak dates in hot water (from a kettle) for 10 mins

  2. Whilst soaking blend/ process the oats into a flour and set aside

  3. Drain the dates and make the caramel by blending the soaked dates, peanut butter, vanilla and salt

  4. Blend the oat flour with 1/4 cup of this caramel

  5. Press the oat layer into a narrow mould (i used a silicon loaf tin, would recommend using baking paper as was v sticky!)

  6. Spread on the remaining caramel and sprinkle with peanuts, pushing them in

  7. Place in the freezer for an hour

  8. Remove and cut into bar shapes and replace in freezer

  9. Melt chocolate in a bain marie and dip the bars in, place on parchment paper and set in the fridge

  10. You could also sub the peanut and peanut butter for any other nut/seed butter and nut/seed for a diff flavour(ps: i warn you these are crazy delicious, you just might have to make double the batch)
