Korean Chilli Jam Chicken Pitta

Ingredients

  • 1 pitta bread
  • 1 chicken breast, thinly sliced
  • 1 tablespoon Mr Vikki’s Korean Chilli Jam
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • Handful of mixed leaves
  • Julienne carrots, courgettes, peppers and onions
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon garlic mayo

Preparation

  1. Mix chicken with chilli jam, soy sauce, and sesame oil. Marinate for 30 minutes.

  2. Cook in a hot pan until golden, sticky and slightly charred.

  3. Toss veggies with rice wine vinegar and set aside.

  4. Warm pitta, slice open to create pocket.

  5. Stuff with mixed leaves, chicken, garlic mayo, and pickled veggies. Enjoy.
