Malaysian Blackened Chicken Dish

Ingredients

  • 1 whole chicken
  • 20 dried chilies
  • 3 shallots
  • 3 garlic cloves
  • 1 thumb-sized piece of ginger
  • Sweet soy sauce to taste
  • Cardamom, star anise, cinnamon for sautéing
  • Turmeric powder to taste
  • Salt to taste
  • 1 stalk lemongrass
  • 1/2 cup water
  • Sugar to taste

Garnishes

  • 1 chopped tomato
  • 1 chopped large onion

Preparation

  1. Blend the shallots, garlic, dried chilies, and ginger.

  2. Cut the chicken into moderate-sized pieces, mix with turmeric powder and a little salt, then fry until half-cooked with the sauté spices and bruised lemongrass.

  3. Add the blended mixture and cook until the oil separates.

  4. Add sweet soy sauce to taste, then add 1/2 cup of water, cover the pot, and bring to a boil.

  5. Add sugar, salt to taste, tomato, and large onion, and when the sauce thickens, turn off the heat and serve.
