Malaysian Spicy Red Chicken Dish

Ingredients

  • 1 whole chicken
  • 20 dried chilies
  • 7 shallots
  • 3 garlic cloves
  • A little ginger
  • A little galangal
  • 5 lemongrass stalks (white part only)
  • 1 cup thick coconut milk
  • Tomato sauce to taste
  • Turmeric powder
  • Salt
  • A little tamarind paste
  • Palm sugar

Preparation

  1. Marinate the chicken pieces with a little turmeric powder and salt evenly then heat oil and fry until three-quarters cooked and set aside.

  2. Using the remaining oil from frying the chicken, reduce if excessive, and stir-fry the ground ingredients until fragrant then add coconut milk and stir.

  3. Add salt, sugar, and tamarind to taste and stir well to combine.

  4. Add tomato sauce and stir again.

  5. Add the fried chicken and mix with the stir-fried ingredients until well combined.

  6. Stir occasionally over medium heat until the chicken and ingredients are fully blended.

  7. The dish is ready to serve.
