Spicy Indonesian Chicken Rendang
Ingredients
- Bird's eye chili
- Galangal
- Turmeric
- Ginger
- Lemongrass
- Red onion
- Garlic
- Salt
- MSG (optional)
- Palm sugar
- Chicken
- Coconut milk
- Toasted coconut
- Kaffir lime leaves or turmeric leaves
- Oil
Preparation
Blend the bird's eye chili, galangal, turmeric, ginger, lemongrass, red onion, and garlic.
Heat oil in a pan and add the blended mixture.
Sauté until the mixture turns slightly brown, then add chili paste.
Add salt, MSG (if using), and palm sugar.
Add the chicken.
Then add coconut milk.
When the mixture is slightly dry, add toasted coconut and sliced lime leaves or turmeric leaves and serve.
