Traditional Minang Chicken Curry
Ingredients
- 1 whole chicken
- 1 inch galangal
- 1 inch ginger
- 1/2 inch turmeric
- 2 large onions
- 4 cloves garlic
- 5 candlenuts
- 12 dried chilies
- 4 bird's eye chilies
- 4 stalks lemongrass
- 1 turmeric leaf
- 4 kaffir lime leaves
- 200 ml coconut milk
- Salt to taste
- 2 pieces asam gelugur
- Oil for frying
Preparation
Grind all the spice ingredients until fine
Clean the chicken, cut according to taste and drain
Heat oil and sauté the ground ingredients
Cook until the sautéed ingredients are done and the liquid evaporates
Add the chicken, stir well and let it cook
Pour in coconut milk with a little water to avoid it being too thick
Add salt to taste and asam gelugur, then taste the sauce
Cook on medium heat until it boils and the sauce thickens again
