Baked Lentil Meatball Bowls
Ingredients
- 1 1/2 cups cooked lentils (or 1 can lentils rinsed and drained)
- 1/2 cup walnuts
- 1/4 cup nutritional yeast
- 1/2 cup rolled oats (gluten free if necessary)
- 2 Tablespoons Italian spice mix
- 2 Tablespoon ketchup
- 1/4 cup veggie broth
Preparation
Preheat oven to 450 degrees.
Add all ingredients to a food processor and pulse until a coarse meal forms. Don’t overmix, you want a few chunks, not a paste.
Form mixture into 2” balls and place on parchment lined baking sheet.
Bake 15 to 18 minutes until firm.
