Baked Lentil Meatball Bowls

Ingredients

  • 1 1/2 cups cooked lentils (or 1 can lentils rinsed and drained)
  • 1/2 cup walnuts
  • 1/4 cup nutritional yeast
  • 1/2 cup rolled oats (gluten free if necessary)
  • 2 Tablespoons Italian spice mix
  • 2 Tablespoon ketchup
  • 1/4 cup veggie broth

Preparation

  1. Preheat oven to 450 degrees.

  2. Add all ingredients to a food processor and pulse until a coarse meal forms. Don’t overmix, you want a few chunks, not a paste.

  3. Form mixture into 2” balls and place on parchment lined baking sheet.

  4. Bake 15 to 18 minutes until firm.
