BBQ Baked Seitan with Mashed Potatoes
Ingredients
- 1 cup vital wheat gluten
- 2 tbsp nutritional yeast
- 1 tsp garlic powder
- 2 tsp smoked paprika
- 2 tsp onion powder
- 1 cup veggie broth
- 1 tbsp soy sauce
- 2 tbsp tahini or nut/seed butter
Preparation
Combine all dry ingredients.
Add in the wet ingredients and stir gently to form a dough.
Knead the dough gently into a ball for less than a minute; do not over knead.
Transfer dough to a lined baking sheet and flatten to 1 inch thick.
Preheat oven to 350F and bake for 25 minutes.
Remove from oven and brush both sides with BBQ sauce.
If baking further, bake for another 10 minutes, then broil on high for 2 minutes to char.
If grilling, brush with BBQ sauce and grill for 5 minutes on each side.
Allow to cool slightly before cutting into strips or slicing.
For mashed potatoes, microwave potatoes using the potato button, then mash with a splash of unsweetened almond milk and a little vegetable base.
Pair the seitan with mashed potatoes, broccoli, and bok choy for serving.
